The lovely folks at Cooking Backstage invited me to chat about my career and cook a healthy meal with them on their YouTube Channel. The channel showcases special guests from the music industry, where they share a dish and talk about their career in the music business.
I chose to make up a quick, easy and healthy version of one of my favourite comfort foods, Pad Thai. I utilized the recipe from one of my faveroutie authors/bloggers and quickly turned a few heads with this dish, including the cooking backstage crew, noted they thoroughly enjoyed the leftovers and went on to create this dish for many others in their lives.
Long story short, it makes me very happy to be able to share these types of recipes I’ve stumbled upon for those who due to health restrictions feel limited to what they can have and for those who are simply looking for a healthier option, but still are able to enjoy a comforting meal.
